Mas de Daumas Gassac — The Singular Icon of the Languedoc
Mas de Daumas Gassac holds a unique place in the history of great French wines. Located near Aniane, in the Gassac Valley, this family estate profoundly changed the perception of the Languedoc, proving that a Mediterranean terroir could produce age-worthy wines of remarkable finesse and complexity.
Founded by Aimé Guibert and Véronique Guibert de La Vaissière, the estate was built on a free, daring vision deeply attached to its place. Today carried forward by the Guibert family, this approach combines grape diversity, balanced ripeness, respectful vinification and a constant search for harmony, far from any excessive sun-drenched demonstration.
A great southern wine conceived with the standards of a true cellar wine. Mas de Daumas Gassac seeks freshness, depth and nuance rather than immediate power. The red, dominated by Cabernet Sauvignon, is defined by its poise, slender dark fruit, garrigue notes and ability to evolve for several decades.
History: a pioneering vision in the heart of the Languedoc
The story began in the early 1970s, when Aimé and Véronique Guibert discovered an old property in the Gassac Valley. The potential of the site was quickly identified: natural freshness, deep limestone soils, a preserved environment and exposures favourable to long, even ripening.
With the guidance of Émile Peynaud, a major figure in Bordeaux oenology, the first vintage of the red wine was produced in 1978. The choice of Cabernet Sauvignon, complemented by a mosaic of grape varieties, gave birth to an unclassifiable wine, Mediterranean in origin yet marked by freshness, structure and longevity that were unusual for the region at the time.
The estate quickly became a benchmark, often nicknamed the “First Grand Cru of the Languedoc”. This expression is less an official classification than a recognition: that of a wine able to stand alongside great French names through its identity, complexity and ageing potential.
Terroir: the rare freshness of the Gassac Valley
The estate lies within a natural amphitheatre surrounded by garrigue, woodland and hills. The Gassac Valley benefits from a cooler microclimate than many areas of the Languedoc, with night-time influences that encourage slow ripening and preserve the balance of the grapes.
The soils, shaped by deep limestone, gravel and ancient formations, give the wines a distinctive structure: substance without heaviness, natural freshness, a long finish and strong ageing potential. This combination largely explains the identity of the red wine, far removed from overly solar Mediterranean profiles.
The red is based mainly on Cabernet Sauvignon, complemented by numerous varieties such as Merlot, Cabernet Franc, Syrah, Malbec, Tannat or Pinot Noir depending on the blend. The white is built around an original palette including Viognier, Chardonnay, Petit Manseng, Chenin and other varieties used in small proportions.
Expression of place: Aniane, Gassac Valley, garrigue, deep limestone soils, Cabernet Sauvignon, rare grape varieties, Mediterranean freshness, dark fruit, wild herbs and a long finish.
Daumas Gassac signature: age-worthy Languedoc wines, nuanced, structured and deeply original, with rare freshness and an identity outside the norm.
Viticulture and vinification: diversity, balance and respect for place
The estate favours viticulture attentive to the natural balance of the vines, biodiversity and the quality of ripeness. The parcels are worked within a preserved environment, where garrigue, woodland and relief play an essential role in the wine’s identity.
In the cellar, vinification remains sober and respectful. The red is conceived as a wine for ageing, with measured extraction and élevage designed to support the structure without hardening the wine. Cuvée Émile Peynaud takes this logic even further, in a rare, long-built expression deeply connected to Cabernet Sauvignon.
Wine style
Mas de Daumas Gassac Rouge is defined by a firm yet civilised structure, fresh dark fruit and notes of cassis, blackberry, garrigue, graphite, fine leather and sweet spices. With age, it develops nuances of tobacco, forest floor, discreet truffle and patinated dark fruits.
Mas de Daumas Gassac Blanc offers an original aromatic expression, combining white fruits, citrus, flowers, discreet exotic fruit, fine honey and lightly spicy notes. It has remarkable ageing capacity for a southern white, gaining complexity without losing its energy.
Emblematic cuvées
Mas de Daumas Gassac Rouge: the estate’s iconic cuvée, dominated by Cabernet Sauvignon, combining structure, freshness, Mediterranean complexity and very strong ageing potential.
Cuvée Émile Peynaud: a rare and confidential cuvée, produced only in selected great vintages. The most ambitious expression of Cabernet Sauvignon at Daumas Gassac, it pays tribute to Émile Peynaud’s decisive role in the birth of the estate. A deep, structured, long-aged wine built for very long cellaring.
Mas de Daumas Gassac Blanc: an original blend of white grape varieties, first produced in 1986, offering a singular aromatic expression, both broad and fresh, with fine ageing capacity.
Mas de Daumas Gassac Rosé: a more immediate, luminous and gastronomic wine, faithful to the estate’s spirit of freshness and freedom.
Moulin de Gassac: a complementary range created in the 1990s, offering a more accessible reading of Languedoc terroirs while preserving the family’s standards.
Ageing and gastronomic pairings
Great vintages of Mas de Daumas Gassac Rouge can evolve for 20 to 40 years in good conditions. The rarer and more selective Cuvée Émile Peynaud follows this same logic of long ageing, with added depth and a particularly ambitious architecture.
At the table, the red pairs beautifully with roast lamb, rib of beef, game, duck, Provençal daube, slow-cooked dishes, confit vegetables, mushrooms, truffle, mature cheeses and characterful Mediterranean cuisine. The white works well with noble fish, poultry, shellfish, citrus-led cuisine, mature goat’s cheeses and lightly spiced dishes.
