A winery designed for gravity

Designed by Basque architect Iñaki Aspiazu, the winery unfolds over seven underground levels perfectly integrated into the landscape of Samaniego. This vertical construction enables gravity-fed vinification, eliminating the need for pumping from grape sorting to bottling. This rare and demanding process preserves the integrity of the berries, limits premature oxidation, and ensures gentle and precise extraction. Each stage, from harvest reception to barrel ageing, is guided by the pursuit of fruit purity and terroir expression.

Vineyards & Grape Varieties

Bodegas Baigorri manages around 35 hectares of estate vineyards and selects additional parcels from partner growers located between 450 and 700 meters above sea level. The soils, predominantly limestone and clay-limestone, give the wines their mineral freshness and elegant structure.

The flagship variety is Tempranillo, emblematic of Rioja, complemented by Garnacha, Graciano, and Mazuelo for reds, and Viura and Malvasia for whites. Vineyard practices are sustainable and increasingly organic, with manual work and a constant focus on soil vitality.

Winemaking & Ageing

Each grape variety and parcel is vinified separately to express its individual character. Long, delicate macerations take place in thermoregulated wooden or stainless-steel tanks, while malolactic fermentations often occur in oak barrels. Ageing lasts between 12 and 24 months in a combination of French and American oak, carefully chosen according to the desired aromatic profile.

The Baigorri style combines volume and elegance, aromatic precision and mineral tension, achieving a fine balance between tradition and modernity.
