Domaine Denis Mortet — Masterful Intensity from Gevrey-Chambertin

A precise, vibrant and distinctive style — a true reflection of the Côte de Nuits.
The domaine’s roots go back to 1956, when Charles Mortet began cultivating his first hectare in Gevrey-Chambertin. His son Denis Mortet joined the estate in 1978 and took over in 1992, managing around 4.5 hectares at the time. A visionary, Denis expanded the domaine by acquiring vines in some of Burgundy’s finest climats — including Chambertin Grand Cru in 1999. His meticulous work both in the vineyard and cellar earned the estate international acclaim.

After Denis passed away in 2006, the estate was taken over by Laurence Mortet (his wife), their son Arnaud Mortet, and their daughter Clémence, who continue to uphold a style that marries intensity, purity, and elegance.

This exceptional mosaic of parcels offers a unique spectrum of Pinot Noir expressions — from the generosity of village wines to the complexity and power of Grands Crus.

Viticulture: Precision & Respect for Life

Since 1996, the estate has eliminated herbicides and chemical fertilizers, favoring ploughing, organic amendments, natural ground cover, and a living-soil philosophy.

While not officially certified, the domaine applies a 50% organic and 50% sustainable approach, adapted to each climat and vintage, to maintain soil health and preserve the finesse of the wines.

Harvesting is 100% manual, with small crates and meticulous sorting at the winery.

Vinification: Controlled Intensity

  • Natural fermentation with indigenous yeasts
  • Partial whole-cluster fermentation depending on vintage and cuvée
  • Maceration of 18–20 days on average (slightly shorter for Chambertin)
  • 5–6 gentle punch-downs per cuvée for soft, progressive extraction
  • Aging 16–18 months in oak barrels, with reduced use of new oak compared to Denis’ era
  • 100% new oak reserved for select cuvées, including Chambertin Grand Cru
  • Sulfur use reduced by two-thirds from the previous generation
