Harvest: exclusively manual, with meticulous sorting in the vineyard and cellar.
Fermentation: indigenous yeasts, wooden or concrete vats depending on the cuvée, gentle extraction adapted to the vintage.
Whole clusters: variable proportion, often partial, used to support freshness, energy and aromatic complexity.
Ageing: around 16 to 18 months in barrel, with measured new oak that is rarely demonstrative, even for the Grand Crus.
