Domaine Rolet – Arbois, Côtes du Jura, L’Étoile, Château-Chalon
A Historic Estate, Mastering All Expressions of the Jura
Founded in 1942 in Arbois, Domaine Rolet stands among the Jura’s most iconic and historically significant producers. With nearly 65 hectares spread across the appellations of Arbois, Côtes du Jura, L’Étoile, and Château-Chalon, the estate holds a unique position: a domaine capable of expressing the full spectrum of Jura styles, from ouillé whites to oxidative wines, from native red varieties to the region’s emblematic Vin de Paille.
Today, guided by a dedicated team faithful to the Rolet family’s founding principles, the domaine continues to uphold a philosophy built on precision, terroir respect, and mastery of traditional techniques that define the Jura’s singular character.
Terroirs & Vineyard
The vineyard rests on a geological mosaic emblematic of the Jura:
- Arbois: deep clay, grey marl, cool soils fostering tension and density.
- L’Étoile: white marl rich in fossils, yielding luminous, saline, precise wines.
- Côtes du Jura: alternating clay, limestone, and layered marl, offering stylistic diversity.
- Château-Chalon: Lias marl, the sovereign terroir of Savagnin aged under veil.
Traditional Jura varieties — Savagnin, Chardonnay, Poulsard, Trousseau, Pinot Noir — are cultivated with sustainable practices and a progressive transition to organic methods. Vineyard work prioritizes natural balance: soil management, controlled yields, and predominantly manual harvesting.
Philosophy & Winemaking
Ouillé Whites
A modern, precise expression of Jura whites: gentle pressing, slow fermentations, and élevage in tank or barrel depending on the parcel. Chardonnays display structured breadth, while ouillé Savagnins reveal mineral tension and fine salinity.
Oxidative Wines & Vin Jaune
The domaine excels in oxidative winemaking — non-topped-up barrels, natural veil formation, slow oxidation — resulting in aromas of walnut, warm spices, curry, and candied citrus. The Château-Chalon, selected from the finest parcels, is one of the Jura’s great classics.
Red Wines
Domaine Rolet remains true to the natural elegance of Jura red varieties: Poulsard (floral, delicate), Trousseau (spicy, structured), and Pinot Noir (fine, harmonious). Gentle macerations, partial destemming, and restrained extraction ensure finesse and precision.
Sweet Wines
The Vin de Paille, a centuries-old Jura tradition, benefits from extended natural drying and patient élevage, achieving a remarkable balance of sweetness, freshness, and aromatic complexity.
Wine Style
Rolet wines are defined by pure aromatics, clear terroir expression, controlled tension, and precise texture. Whites are fresh and structured, reds are elegant and expressive, and oxidative wines show rare depth and complexity. Together, they form a coherent and complete portrait of what the Jura can offer at its finest.
