Domaine du Collier — The Mineral Depth of Great Saumur from Brézé

Domaine du Collier is one of the most sought-after names in Saumur. Founded in 1999 by Antoine Foucault and Caroline Boireau, the domaine belongs to the great Loire tradition while asserting a deeply personal, demanding identity around the limestone terroirs of Brézé.

Antoine Foucault, from the family behind the legendary Clos Rougeard, built with Caroline Boireau a discreet estate that has become cult. Production remains confidential, focused mainly on Chenin Blanc, with a small share of Cabernet Franc. The wines are defined by density, salinity, tension and exceptional ageing capacity.

The spirit of the domaine

A Loire of depth, patience and silence. Domaine du Collier seeks dense, mineral and vibrant wines, where Chenin expresses the strength of Brézé limestone with broad substance, fine acidity, deep salinity and very long persistence.

History: Antoine Foucault, Caroline Boireau and the heritage of Saumur

Domaine du Collier was born in 1999, when Antoine Foucault and Caroline Boireau decided to create their own estate in Saumur. Antoine Foucault comes from a family deeply associated with the region’s greatest wines, giving the project a particular level of ambition from the outset.

The domaine is built around vines located mainly in Brézé, one of the most distinctive terroirs of the Saumur region. Here, Turonian limestone, deep cellars and slow ripening shape white wines that are powerful, straight and saline.

Despite limited production, the domaine quickly acquired an exceptional reputation. The bottles are rare, sought after by lovers of great Chenin and often compared, in their intensity and longevity, to the finest white wines of the Loire.

Terroirs: Brézé and the strength of Turonian limestone

The domaine farms around 6 to 7 hectares, mainly around Brézé. This sector is famous for its limestone soils, tuffeau outcrops and cellars carved into the rock. Chenin here gives wines of remarkable density, with saline tension and mineral depth rarely matched.

Old Chenin vines form the heart of the domaine. They produce concentrated grapes, carried by natural acidity and very Loire-like energy. Cabernet Franc, grown in smaller quantities, gives reds that are deep, structured and austere in youth, but highly expressive with time.

Brézé gives Domaine du Collier wines an almost tactile dimension: the palate is broad yet taut, the substance is deep but never heavy, and the finish often leaves an impression of stone, salt, wax and ripe citrus.

Terroir expression: Saumur, Brézé, Turonian limestone, tuffeau, Chenin Blanc, Cabernet Franc, salinity, tension, depth and long ageing.

Collier signature: balanced ripeness, natural fermentations, long ageing, dense, straight, mineral and highly persistent wines.

Viticulture: exacting work, low yields and precise ripeness

Vineyard work is based on the search for full but precise ripeness. The domaine favours low yields, close observation of each parcel and harvesting decisions adapted to the balance of the vintage. Chenin must reach enough ripeness to reveal its depth while retaining the tension that defines it.

This approach gives concentrated grapes that remain carried by acidity and terroir salinity. The domaine does not seek easy or immediate wines: its cuvées often require time, air and sometimes several years in the cellar to reveal their full complexity.

Aromatic profile

Young whites: ripe lemon, yellow apple, pear, quince, beeswax, white flowers, wet stone, chalk and a slight smoky note.

Evolved whites: discreet honey, dried fruits, sweet spices, saffron, wax, hazelnut, wet tuffeau and a long saline finish.

Reds: black fruits, dark raspberry, graphite, pepper, violet, fresh earth and firm tannins.

Overall impression: profound, mineral and dense wines that often need time to reveal their true dimension.

Vinification: long ageing and Loire patience

Domaine du Collier vinifications are conducted with patience. Fermentations take place naturally, at the pace of the wine, and long ageing allows each cuvée to build slowly. This approach gives wines that do not seek immediate brilliance, but depth and duration.

Fermentation: indigenous yeasts, slow rhythm, respect for the natural balance of the grapes.

Ageing: long ageing, often in tuffeau cellars, encouraging slow, stable and deep evolution.

Style: wines that may seem reserved on opening, but show great density and remarkable evolutionary capacity.

Philosophy: let time build the wine, preserve terroir energy and never simplify Chenin expression.

Wine style

The white wines of Domaine du Collier are powerful, but never heavy. Their strength comes from Chenin density, limestone salinity and palate length. They can appear closed in youth, but gain complexity with air and ageing.

The reds, produced in smaller quantities, express Cabernet Franc in a firm, deep and mineral style. More austere than seductive in youth, they develop with time aromas of black fruit, graphite, spice and noble earth.

Emblematic cuvées

Saumur Blanc La Charpentrie: a great Chenin cuvée from old vines, dense, profound, saline and built for very long ageing.

Saumur Blanc La Ripaille: a taut and powerful white, marked by ripe citrus, wax, stone and great mineral length.

Saumur Blanc: a more accessible yet already deep expression of the domaine’s style, with fine substance and a saline finish.

Saumur Rouge La Ripaille: a structured, dark and mineral Cabernet Franc, offering black fruits, graphite, spice and firm tannins.

Saumur Rouge: a deep and serious Loire red that often needs a few years to soften.

Ageing and gastronomic pairings

The great whites of Domaine du Collier can evolve for 10 to 25 years depending on the cuvée and vintage. Their structure, acidity and density allow them to develop complex aromas of wax, honey, spice, dried fruit and wet tuffeau.

At the table, the whites pair beautifully with noble fish, lobster, scallops, creamed poultry, mushroom-based dishes, aged Comté, brown-butter preparations and Loire gastronomy. The reds work well with lamb, duck, grilled meats, fine game, mushrooms, slow-cooked dishes and terroir cuisine.
