Château de Fosse-Sèche — A Precious Balance Between Mineral Tension and Natural Sweetness

Nestled atop the heights of Anjou, Château de Fosse-Sèche is an iconic family estate, renowned for its precise exploration of the equilibrium between botrytised sweetness and the vibrant acidity of its terroir. Driven by an uncompromising philosophy, the domaine stands at the crossroads of tradition, elegance, and purity, within a still-confidential appellation of remarkable depth and identity.

Terroir & grape varieties

The vines flourish on unique soils of siliceous schist and granite from the Armorican Massif, imparting both intense freshness and singular aromatic purity to the wines.

  • Whites: 100% Chenin Blanc — for both dry and sweet cuvées.
  • Reds: Cabernet Franc & Cabernet Sauvignon — the foundation of long-aged wines, crafted without excessive oak.

Viticulture & philosophy

The estate is farmed under certified biodynamics, with an uncompromising respect for life and its natural rhythms. Harvests are done manually, in successive passes according to ripeness or botrytis levels. Production is intentionally low: some wines are only made in exceptional vintages, reinforcing their rarity and collector status.

Winemaking & ageing

  • Gentle pressing, slow fermentation in clay, concrete, or neutral oak ovoid tanks.
  • Ageing on fine lees, without excessive racking, for 12 to 24 months.
  • No fining or filtration — a commitment to precision and authentic expression.
  • Red wines are often aged without new oak, to highlight fruit finesse and natural structure.

Signature wines

Whites

  • Arcane (Chenin Blanc, dry) — the domaine's flagship cuvée: taut, mineral, with subtle citrus and a long, vibrant finish.
  • Les Tris de la Chapelle (Coteaux-du-Layon) — a rare botrytised wine, with notes of dried apricot, quince, honey, and sweet spices, supported by lively acidity.

Reds

  • Eolithe (Cabernet Franc & Cabernet Sauvignon) — a major cuvée aged in ovoid tank, silky tannins and an expressive, layered palate.
  • Gondwana (Cabernet Franc) — from very old vines, deep and long-lived, with a cellaring potential of 15+ years.
  • Laurasie (Cabernet Sauvignon) — both elegant and powerful, with cassis, fine leather, and mineral-driven focus.
  • Réserve du Pigeonnier (parcel selection) — a bold, radiant red, crafted in tiny quantities; a connoisseur’s wine.

Style & recognition

The style of Fosse-Sèche is defined by singular mineral tension, precise balance, and a remarkably refined mouthfeel. These wines are among the most sought-after in the Loire Valley and stand shoulder-to-shoulder with the finest French cuvées in terms of authenticity, energy, and ageing potential.
