The Estate

Based in Tracy-sur-Loire, at the heart of the Pouilly-Fumé appellation, Domaine Jonathan Didier Pabiot has emerged as one of the Loire Valley’s most compelling voices in Sauvignon Blanc. Farming around fifteen hectares, the domaine crafts terroir-driven wines of remarkable precision, combining purity, depth and a vibrant saline edge. Organic farming, biodynamic principles and low-intervention winemaking form the backbone of this estate’s pursuit of a pure, expressive Pouilly-Fumé.

Terroir & Vineyard

The vineyard is rooted in three emblematic soil types of Pouilly-Fumé : flint (silex), Kimmeridgian marl and limestone. These slopes, ideally exposed, offer slow and harmonious ripening—an essential condition for the noble expression of Sauvignon Blanc. Deep-rooted vines in living soils give wines marked by a clear, vertical minerality, tension and a distinctive smoky flint character.

Philosophy & Viticulture

The domaine is fully farmed in organic agriculture and follows biodynamic practices. No herbicides or synthetic products are used. Soil is worked with a horse on selected plots, natural grass cover is encouraged, and plant infusions as well as home-made composts support the vines throughout the growing season. This vision is guided by a simple principle : healthy soils produce vibrant, expressive wines.

Winemaking & Ageing

All grapes are hand-harvested in small crates, followed by meticulous sorting. Pressing is slow and gentle, fermentations occur with indigenous yeasts, and ageing takes place on fine lees for several months. Depending on the cuvée, the wines mature either in stainless steel or in oak barrels to refine texture and complexity. There is no fining and only minimal filtration, preserving the depth, energy and chalk-infused character of the terroir.

Wine Style

Wines from Jonathan Didier Pabiot are defined by their vibrant tension, crystalline purity and striking minerality. Aromas evoke candied lemon, white flowers, warm stone and wet chalk. The palate shows incisive freshness, depth and a long, saline finish. Far from the varietal clichés of Sauvignon Blanc, these are serious, terroir-driven wines with remarkable energy and ageing potential.

Partially aged in oak, this cuvée displays a more ample texture and a refined, gastronomic expression of Sauvignon Blanc. Perfect with fine fish and delicate poultry dishes.
