Less speculative than the most famous villages of the Côte d’Or, Mercurey offers a serious and still accessible expression of Burgundy. The vineyards of Mercurey are mainly planted on clay-limestone soils, with well-exposed slopes that allow regular ripening of Pinot Noir. This combination gives red wines that are full, fresh and well built, often with more substance than in other Côte Chalonnaise appellations.
Red wines account for the vast majority of production. They often show cherry, raspberry, wild strawberry, gentle spice and, with age, a more earthy nuance. The whites, produced in smaller quantities, offer a fresh, precise and highly food-friendly expression of Chardonnay.

Red Mercurey wines naturally pair with roast meats, veal, pork, poultry in sauce, mushrooms, slow-cooked dishes and mature cheeses. Their structure allows them to accompany generous cuisine while preserving the fruit and finesse of Pinot Noir.
White Mercurey wines work well with fish, shellfish, poultry in cream sauce, risotto, seasonal vegetables and firm cheeses. Their freshness and balance make them versatile wines for refined dining.
Red Mercurey wines are best served around 15–16°C. Village-level cuvées can be enjoyed young for their fruit and energy, while Premier Cru bottlings often gain depth after a few years in the cellar.
White wines are best served between 10 and 12°C to preserve their freshness and precision. Depending on the domaine, climat and vintage, some cuvées can develop notes of hazelnut, fresh butter, dried fruit and dried flowers over time.
