Founded in 1928 by Giacomo Cavallotto and now led by the fourth generation — Laura, Giuseppe and Alfio Cavallotto — the estate stands among the most reliable, consistent and respected names in traditional Barolo.
Located in the heart of Castiglione Falletto, the domaine is built around a unique jewel: Bricco Boschis, the estate’s monopole, considered one of the most constant, profound and historically important crus of the commune. Terroir & Viticulture
The domaine covers 25 hectares across two major terroirs:
- Bricco Boschis (monopole) – south and southwest-facing slopes, marl-limestone soils rich in fossil sediments, structural density and exceptional longevity.
- Vignolo – a neighbouring cru with a slightly cooler orientation, offering a more lifted and taut profile with precise tannins.
Viticulture is sustainable, based on natural soil management, controlled cover crops, limited interventions, strict yield control, and meticulous hand-harvesting. Old vines play a crucial role, their deep roots delivering balance, uniform ripening and a particularly pure expression of Nebbiolo.
Winemaking & Ageing
Cavallotto is one of the pillars of traditional Barolo. Its stylistic identity relies on a slow, patient, non-interventionist approach:
- long fermentations,
- extended macerations with natural, progressive extraction,
- prolonged ageing in large Slavonian botti,
- no use of new oak,
- bottling without unnecessary technology, true to the vintage.
This time-honoured approach yields serious, vertical, deep wines built for long ageing.
