  • hand harvesting with severe selection,
  • no oenological additives: no enzymes, no cultured yeasts, no corrections,
  • spontaneous, sometimes very long fermentations,
  • extended ageing in barrels, demi-muids or amphorae,
  • minimal sulphur, only when necessary,
  • bottling without filtration or with ultra-light filtration,
  • constant pursuit of natural balance.
