Nestled in the heart of Gevrey-Chambertin, the Domaine des Varoilles has long been considered one of the key estates of the Côte de Nuits, renowned for the exceptional quality of its vineyards and the rarity of its monopoles. Covering around 10 hectares dedicated solely to Pinot Noir, the domaine embodies a classical Burgundian heritage shaped by centuries of meticulous work and ideally placed vineyards.
Terroirs & vineyard
The domaine’s vineyards are all located within the commune of Gevrey-Chambertin, benefiting from east to south-east exposures that ensure optimal sunlight and natural aeration. The soils, composed mainly of limestone and clay-marl, offer both structure and finesse, allowing the wines to express remarkable depth and precision.
Domaine des Varoilles is particularly distinguished by several historic monopoles, including Clos des Varoilles (Premier Cru), La Romanée (Premier Cru) and Clos du Meix des Ouches. These parcels are complemented by superb holdings in Gevrey-Chambertin and in the prestigious Charmes-Chambertin Grand Cru, forming a remarkable mosaic of elite terroirs.
Wine style
Domaine des Varoilles wines embody the classic character of Gevrey-Chambertin: depth, refinement and controlled power. Aromas of red and black fruits (cherry, raspberry, blackberry) mingle with delicate notes of spice, licorice and forest floor. On the palate, the texture is structured yet elegant, supported by silky tannins and a precise freshness that sustains long, harmonious finishes. The wines have an excellent ageing potential, often reaching full complexity after several years in the cellar.
Philosophy & winemaking
In the vineyard, the domaine emphasises a parcel-by-parcel, sustainable approach, with careful soil management, moderate yields and precise picking dates tailored to each climate. Hand harvesting is followed by rigorous sorting to ensure pristine fruit quality. Vinifications are carried out in temperature-controlled tanks, often with a proportion of whole clusters depending on the vintage, to preserve aromatic purity and tannic finesse.
Ageing typically lasts 12 to 18 months in French oak barrels, with a carefully managed proportion of new wood. The goal is to craft wines with perfectly integrated oak, highlighting the identity of each terroir without overshadowing it.

Clos des Varoilles Premier Cru (Monopole)
The domaine’s flagship wine. Deep, complex and long, with dark fruit, spice and a noble structure. A benchmark of the estate’s style.
La Romanée Premier Cru (Monopole)
A more floral and aerial expression, marked by delicacy, lifted aromatics and a refined mineral backbone. Svelte yet persistent.
Charmes-Chambertin Grand Cru
A grand, velvety and generous wine. Notes of ripe red fruit, dried flowers and licorice. Full-bodied, noble and impressively long.
