Terroir & vineyard
The domaine farms a patchwork of parcels on the northern Côte de Beaune, with a core of vines around Chorey-lès-Beaune and extensions into the slopes of Savigny-lès-Beaune, Beaune and Aloxe-Corton, up to the Grands Crus of Corton. The vines are rooted in classic clay-limestone soils, with well-drained subsoils that favour wines of both flesh and tension.
The vineyard is planted almost exclusively to Pinot Noir, with selected plots of Chardonnay on cooler, better-ventilated sites. Many of the vines are of venerable age, contributing naturally low yields and a fine concentration of fruit. Philosophy & viticulture

Winemaking & ageing
In the cellar, Domaine Tollot-Beaut favours traditional vinification supported by modern precision. The reds are generally destemmed, then undergo a controlled fermentation in temperature-regulated vats with indigenous yeasts. Macerations are carefully managed through gentle pump-overs and pigeages, aiming to extract fine tannins and vibrant colour without heaviness.
The wines are then aged in French oak barrels, with a moderate proportion of new oak adapted to each appellation – more discreet for regional wines, more present for premiers and grands crus. The objective is to refine the texture, bring subtle complexity and polish the tannins, without masking the identity of the terroir. The whites are pressed gently, fermented partly in tank and partly in barrel, and aged on fine lees to combine aromatic precision with a harmonious, Burgundy-style creaminess.
