Winemaking & ageing

Rigorous plot-by-plot approach: hand-harvesting at optimal ripeness, meticulous sorting, fermentation in temperature-controlled stainless steel vats. Ageing lasts around 18 months in French oak barrels, with a significant proportion of new wood, bringing depth, suppleness, and aromatic complexity while preserving the identity of the terroir.
