- 3 to 4 years on lees for non-vintage cuvées (far beyond the legal minimum).
- 10+ years for certain limited editions.
- Exceptional patience for Blanc des Millénaires, produced only in outstanding vintages.

Winemaking: precision, parcel selection & reserve wines

- a very high proportion of reserve wines (up to ~40% in Brut Réserve),
