Château-Chalon is one of the crown jewels of the Jura wine region in eastern France. Entirely dedicated to the production of Vin Jaune, it represents one of the most unique and prestigious expressions of French winemaking. History & Origins
Created in 1936, Château-Chalon was one of the first French AOCs. It takes its name from the stunning medieval village of Château-Chalon, officially classified as one of “Les Plus Beaux Villages de France.” Perched on a rocky outcrop overlooking the Seille Valley, the village offers a spectacular panorama of terraced vineyards, symbolizing the perfect harmony between terroir, history, and heritage.
A Terroir with a Strong Identity
The appellation covers just 50 hectares of steep slopes reaching up to 400 meters in altitude. The soils, rich in Lias limestone marl, provide excellent drainage and impart the wines with a distinctive minerality and tension. The continental climate — marked by cold winters and warm summers — allows for slow, even ripening of Savagnin, resulting in grapes of outstanding quality.
Savagnin & the “Sous Voile” Ageing
The Savagnin grape is the soul of Château-Chalon. After fermentation, the wine undergoes a unique oxidative ageing process under a natural yeast veil in un-topped barrels. This “sous voile” ageing lasts at least six years and three months, during which the wine develops its unmistakable aromatic signature:
- Fresh walnut and dried fruits
- Soft curry and exotic spices
- Hints of yeast, baked apple, and a delicate saline minerality
This singular winemaking method gives Vin Jaune its incomparable aromatic power and extraordinary longevity — often several decades, and sometimes more than a century.
