  • Salvioni (La Cerbaiola)

When Giulio Salvioni commenced production in 1985 at his La Cerbaiola estate, he did so with Attilio Pagli at his side. Pagli’s career commenced at Soldera, where he mentored under esteemed consultant Giulio Gambelli.

Giulio Salvioni now owns 22ha land, uses only 4ha for the vineyards and he produces only 15,000 bottles without any compromise.

Salvioni distinguishes himself most prominently through what he doesn’t have, however—namely, a Riserva.

  • Sandhi Wines, Santa Rita Hills

Sandhi is a small production California winery focusing on select vineyards from the Sta. Rita Hills in Santa Barbara County. Sandhi was founded in 2010 by Rajat Parr, the wine director for Michael Mina Restaurants, and winemaker, Sashi Moorman.

Sandhi is dedicated to making wines of finesse, minerality, acidity, structure and balance. Wine achieves power and beauty through the seamless integration of these qualities, and this is the inspiration for us. We feel wines exhibiting extreme ripeness, alcohol, oak and other discordant exaggerations cannot truly express a specific vineyards’ terroir.

  • Sangenis i Vaqué

The Bodega Sangenís i Vaqué was founded in 1978 by Pere Sangenís and Conxita Vaqué in the wine region of Priorat.

The vineyards are located in Porrera, famous for its llicorella (schist and slate) terraces and vines, all of which are venerable, and divided between Garnacha and Cariñena.

  • Santi

The house of Santi was founded in 1843 by Attilio Carlo Santi, who started his production with the classics – Soave, Valpolicella, Recioto, Amarone and Bardolino obtained from the grapes he harvested in his own vineyards in the heart of the very best zones.
Over the years, Santi has gradually transformed.
It launched the “GIV quality system” that runs through the entire production process, from the vineyard to vinification techniques to the wine-making philosophy to bottling.

  • Saxum Vineyards

Saxum Vineyards: The Viticultural Excellence of Paso Robles

Saxum Vineyards, founded by Justin and Heather Smith, is today one of the most sought-after wineries in Paso Robles, California. Renowned for its Grenache, Syrah, and Mourvèdre (GSM) blends, the estate expresses the full richness of the terroir through unique limestone soils and artisanal winemaking techniques.

    An Exceptional Terroir

Located in the Willow Creek district, Saxum Vineyards enjoys an ideal climate for Rhône varietals. The vines are planted on steep hillsides with limestone-rich soils, giving the wines remarkable depth and elegance. This terroir, coupled with low yields and precision viticulture, results in wines of unparalleled concentration and finesse.

    Philosophy and Winemaking

Justin Smith takes a non-interventionist approach, favoring natural methods to enhance the terroir expression:

Organic and sustainable farming without pesticides or herbicides.
    Hand-harvested at optimal ripeness.
Fermentation with native yeasts to preserve the identity of the wine.
Extended aging in oak barrels and amphorae for added complexity.
Limited production and bottling without filtration, ensuring wines of exceptional purity.

    Iconic Wines of Saxum Vineyards

The estate's wines stand out for their aromatic richness, silky texture, and excellent aging potential. Some of the most prestigious cuvées include:

    • James Berry Vineyard Proprietary Red – An iconic blend of Grenache, Syrah, and Mourvèdre, scored 100/100 by Robert Parker for the 2007 vintage.
    • Broken Stones – Dominated by Syrah, this wine offers tannic power and exceptional length.
    • Bone Rock – A terroir-driven wine, intense and complex, sourced from the James Berry Vineyard.

    Recognition and Rarity

Saxum’s wines are highly sought after and produced in limited quantities (~3,000 cases annually). As the estate does not have an open tasting room, its wines are only available through a waiting list or select specialized wine merchants.
