  • david leclapart

"Léclapart is one of Champagne’s most vocal advocates of biodynamic farming, having been certified biodynamic since 2000, and with an approach in the cellar governed by the same principles.

His entry-level wine, L’Amateur, is vinified with indigenous yeasts in enamelled-steel tanks, as he believes that stainless steel imparts a negative energy into his wines. In contrast, the rest of his cuvées are wholly or partially fermented in second-hand barrels purchased from Domaine Leflaive in Burgundy.

All of his Champagnes are released without dosage, and all are typically low in sulphur. These are highly individual Champagnes, marked by a striking purity and elegance, as well as a racy tension and savoury complexity derived from Trépail’s chalky soils."

  • Denis Mortet

Domaine Denis Mortet in Burgundy was founded by Denis Mortet in the early 1990s.

The Domaine's 10 hectares encompass 14 different Appellations, including two Grands Crus - Clos-de-Vougeot and Chambertin - and are a far cry from the days of his father, Charles, who started off with only one hectare.

  • Deutz

Deutz are one of the grandest Champagne houses in the village of Ay, where they are near neighbours to Bollinger.
They have an outstanding classic range and two deluxe cuvées, William Deutz and the sublime Blanc de Blancs, Amour de Deutz, which is only released in the very best years.
  • Diego Conterno

The Conterno name can get a little confusing. In this case Diego is related to the famous Conterno-Fantino winemaking family, but whilst of a similar high quality, his wine style is more classic, eschewing French oak barrels for large old botti for ageing. From four vineyards in Monforte, this has great warmth and generosity
