Located in Les Loges, in the heart of the Pouilly-Fumé appellation, Jonathan Didier Pabiot represents the fifth generation of his family at the estate. Since 2005, he has embraced organic and biodynamic viticulture, earning certification in 2010 and refining a style that focuses on the purity and tension of Sauvignon Blanc.His wines are crafted with native yeasts, long lees ageing, and minimal intervention — all to express the distinct identity of each terroir.
Terroir & vineyard work
The estate covers 21 hectares across five communes: Les Loges, Tracy, Villiers, Saint-Laurent, and Charenton. Soils include kimmeridgian marl, silex, caillottes, and white clay-limestone.No herbicides or synthetic products are used, and the vineyard work follows the rhythms of nature, with a focus on biodiversity and soil vitality.
