Saint-Aubin – The Discreet Elegance of Great White Burgundy

Nestled in the Côte de Beaune, between Puligny-Montrachet and Chassagne-Montrachet, the Saint-Aubin appellation (AOC since 1937) produces some of the most refined and mineral-driven white Burgundies, as well as delicate and elegant Pinot Noir reds. Long considered an insider's secret, Saint-Aubin now attracts wine lovers seeking tension, freshness, and exceptional value from Premier Cru Burgundy.

Terroir & Geography

The appellation lies entirely within the village of Saint-Aubin, at an elevation of 300 to 350 meters, on steep, well-exposed hillsides. Its limestone-clay soils and proximity to some of the world’s most prestigious terroirs lend its wines a remarkable mineral character.

Grapes & Wine Styles

White wines (approx. 75% of production)

Made exclusively from Chardonnay, Saint-Aubin whites are known for their lively freshness, minerality, and aromas of citrus, white flowers, and flint.

Red wines (approx. 25%)

Produced from Pinot Noir, these wines offer a light and fruity profile, with fine tannins—ideal for drinking young or with a few years of aging.

Premier Cru Vineyards

Saint-Aubin boasts 30 Premier Cru climats, planted on some of the appellation’s finest slopes. Notable sites include:

  • En Remilly – a direct neighbor of Chevalier-Montrachet

  • La Chatenière – a steep parcel yielding chiseled, precise wines

  • Les Murgers des Dents de Chien – intensely mineral and taut

  • Les Champlots, Sur Gamay, Le Charmois, Les Frionnes, Les Perrières

These terroirs produce cuvées of great precision, capable of standing alongside more prestigious crus from neighboring villages.

Food Pairings

  • White wines: grilled fish, shellfish, oysters, creamy poultry dishes, aged cheeses (Comté, Beaufort)

  • Red wines: charcuterie, roast poultry or veal, mild game, and washed-rind cheeses
