CHABLIS 1ER CRU BUTTEAUX (mise tardive) 2015 - PATTES LOUP

Tasting notes

"From bottle, the 2015 Chablis 1er Cru Butteaux Mise Tardive has realized all the promise it displayed during its lengthy élevage. Unfurling in the glass with aromas of pear, wheat toast, fresh pastry, wet stones, confit citrus and a light touch of reduction, it's full-bodied, satiny and enveloping, with a deep, multidimensional core, racy acids and an immensely long finish. This is a singular wine that ranks as one of Thomas Pico's finest achievements to date."

INFORMATIONS ABOUT THE ESTATE

Domaine Pattes Loup (Thomas Pico): A Leading Name in Biodynamic Chablis

The Domaine Pattes Loup, founded by Thomas Pico, is one of the most renowned estates in Chablis today. Located in Courgis, Burgundy, this vineyard stands out for its commitment to organic farming and artisanal winemaking.

The History of Domaine Pattes Loup

Coming from a family of winemakers, Thomas Pico took over eight hectares of the family estate in 2004. Driven by a desire to preserve the environment and fully express the Chablis terroir, he immediately converted to organic farming, earning certification in 2009.

His approach is based on minimalist and demanding viticulture, banning pesticides and favoring natural methods to enhance the purity of Chardonnay.

The Wines and Terroirs of Thomas Pico

The Domaine Pattes Loup primarily cultivates parcels classified as AOC Chablis and Chablis Premier Cru, particularly in exceptional climats such as:

  • Chablis Vent d’Ange – A flagship cuvée, partially vinified in concrete eggs, offering great tension and aromatic richness.
  • Chablis Premier Cru Butteaux – A mineral and structured wine, both intense and elegant.
  • Chablis Premier Cru Beauregard – A complex cru with notes of citrus and flint.
  • Chablis Premier Cru Côte de Jouan – A vibrant and precise wine, perfect for lovers of great white wines.

Winemaking Methods

In the cellar, Thomas Pico favors a low-intervention approach:

  • Indigenous yeasts for spontaneous fermentations, highlighting the unique terroir.
  • Extended aging on fine lees (14 to 30 months) to develop aromatic complexity.
  • Diverse aging vessels: stainless steel tanks, used oak barrels, and concrete eggs.
  • No fining or filtration before bottling, ensuring pure and authentic wine expression.

International Recognition

The wines of Domaine Pattes Loup have captivated wine enthusiasts and critics worldwide. In 2011, Antonio Galloni described it as "the most exciting estate in Chablis today." Pico’s style, blending precision, freshness, and depth, is often compared to the legendary names of Didier Dagueneau and Cédric Bouchard.
