The Château-Chalon appellation is located in the Jura region of eastern France and is exclusively dedicated to the production of vin jaune, a dry, oxidative white wine renowned for its complexity and exceptional aging potential.
Created in May 1936, the Château-Chalon appellation is one of the oldest in France. The appellation is named after the medieval village of Château-Chalon, perched on a hill overlooking the Seille Valley. This village is classified as one of the "Most Beautiful Villages of France" and offers breathtaking views of the surrounding vineyards.
The vineyards of Château-Chalon extend over approximately 50 hectares, primarily on steep slopes rising to an altitude of 400 meters. The soil is composed of marl and limestone, providing excellent drainage and a characteristic minerality to the wines. The climate is continental, with cold winters and warm summers, favoring a slow and steady maturation of the grapes.
The Savagnin grape is the exclusive variety used in the Château-Chalon appellation. After alcoholic fermentation, the wine is aged under a natural yeast film called the "voile" that forms on the surface of the wine in barrels. This oxidative aging process lasts for a minimum of six years and three months, during which the wine develops its signature aromas of nuts, curry, and dried fruits.
The wine is bottled in a traditional 62 cl bottle called the "clavelin." This volume represents the amount of wine remaining after six years and three months of barrel aging, according to local legend.
Vin jaune from Château-Chalon pairs perfectly with traditional Jura dishes, such as Bresse chicken with morels, aged Comté cheese, or escargots. Its richness and complexity also make it an excellent wine for meditation.
Renowned producers from the Château-Chalon appellation include Domaine Berthet-Bondet, Domaine Rolet, and Domaine Maire & Fils, who continue the tradition and excellence of vin jaune from the region.
